Tasty Bites : Rosemary Potatoes
As the weather gets chilly, I begin to crave richer dishes—breads, soups and potatoes. Some of my favorite dishes this time of year are those seasoned with strong flavorful herbs, particularly rosemary. The fingerling potato recipe below is just such a dish, which I found from Ms. Contessa.
1.5 lbs. fingerling potatoes
1/8 cup olive oil
3/4 tsp sea salt
1/2 tsp freshly ground pepper
1 tbsp minced garlic
2 tbsp minced rosemary leaves
Preheat your oven to 400 degrees F and cut the potatoes in half or in quarters. Toss the potatoes with olive oil, sea salt, salt, pepper, garlic and rosemary. Put the potatoes on a baking sheet. Roast for at least 1 hour or until crisp and brown. Flip the potatoes 2 or 3 times while cooking to ensure evenly cooked. Enjoy!
